Yummiest Homemade Pizza

Our fun friends the Gunderson's had us over for dinner last night. I think I have decided it is the ultimate luxury for someone else to cook you a homemade meal. They made homemade pizza--and it was just so good I asked for the recipe. So, here is a little gift I am passing along to you courtesy of Amanda. Thanks again guys!

French Bread-Bread Sticks-Pizza Dough

Loaves:

Dissolve 2 T yeast with a little (1 tsp.) sugar or honey in ½ cup warm water

In mixing bowl place: 1 T salt

2 T oil

2 T honey or sugar

2 1/2 cups hot water

Add 5 cups flour. Mix together then add yeast mixture. Mix. Add 3 more cups flour. Blend 5 minutes. Let rise twice. Split in two for two large loaves, or 4 equal parts for 4 smaller loaves. Form into loaves. Score diagonally, brush with beaten egg white, sprinkle with sesame seeds, let rise. Bake at 350F for 25 minutes. Brush with butter while warm.

STICKS:

Roll dough into rectangle, Cut in 4x6 pieces. Cut three or four fingers ¾ through lengthwise. Bake at 400F for 15 minutes. Brush with melted garlic butter with sweet basil added. Serve warm

PIZZA (makes 4 pizzas):

Make ball of dough approximately the size of your fist. Roll into circle to fit pan. Place dough on pan, spread with pizza sauce sprinkle with cheese and add meats, vegetables, etc. Bake 375-400F for 15 minutes.

Happy Birthday Ashley!

Just wanted to give a shout out to my sister who's birthday is this week. Here are my top five reasons why I think Ashley is just fab:

1. She is just gorgeous. Her eyes, her hair, her smile. You could look at her all day and never get bored.

2. She is so kind. She really always tries to see the best in everyone and totally discourages gossip.

3. She is really goal oriented. Once she says she is going to do something, she usually sticks with it.

4. Growing up, she kind of had a little mean streak in her. We haven't gotten in a physical fight in many years (thank goodness!), but she was the strongest one of us all. I always thought that was impressive:)

5. She is just fun to talk to. She loves US Weekly, traveling and eating out just as much as I do, so we normally have loads to talk about all the time.

Friendship

Wednesday was like a little bottle of happiness for me. I was totally spoiled and had the chance to go to lunch with my friend Amber and then dinner with Tifani. It was so fun catching up with Amber--she is like the reality of my adult life--knowing me when I was older, being involved in my career, talking about all those adult issues of marriage stuff, kid stuff, etc. that crop up. I am so grateful for her friendship. She is one of those people that just gets me--when it seems like a lot of people just don't:) Such a treat to see her whenever I do. Have fun in Hawaii Amber! I am jealous:)

Then, I got to see Tifani. Tif was my best friend in high school. We weathered all those teen years together through boyfriends, cheerleading, Spanish--the list could go on and on. We have kind of lost touch over the years. Neither of us could really figure out how or why, and I kind of just chalked it up to the last few years that it just kind of happens. But, through the magic of blogs (he, he) we found each other again. Tifani was my girl soul mate--we could talk about any and everything--and we usually did in her basement, sleeping out on the tramp or driving around in La Bamba. Seeing and talking to Tifani again made my so sad we have missed out on years of the kind of chatter that just fills your soul somehow. She is another one of those people that just gets me--the real me--that loves being kind of crazy and doesn't quite fit the perfect mold. As cheesy as it sounds, some little part of me got put back together finally on Wednesday night. I have my friend back, and it is a wonderful feeling:) So, Tif, thanks for the fun memories of our ceramic ballet shoes to Mr Nielsen, the jicama, and dedication songs on the radio. Love you to death and hope our new friendship is just as fun (and of course meaningful) as our last was.

Thanks to both of you for listening to my grouchy Christmas attitude. I think this weekend will do just the trick to get me feeling more merry:)

Happy Birthday Ian

My cute little brother's birthday was yesterday. We are eight years apart, so he is my one sib I remember as a baby. I remember my mom bringing him home in a little red stocking and just thinking he was the sweetest thing ever. I loved taking care of him and pretending like he was my own baby (probably would have been a good thing if that love of taking care of infants would have stuck!). We took him everywhere with us growing up (outside to play, to a friends house, etc.), and I remember loving his little mischievous personality. I remember when he left on his mission feeling like I was going to die not being able to talk to him anymore for a very long time. He has grown up to be such an example and friend to me. He is one of my favorite people ever, and inspires me with his creativity, goals and spirit. I miss not seeing him on a regular basis as he is down at BYU. It is such a treat to see him and catch up on his crazy single life, share music and see his newest photos.

Love you forever Ian! Can't wait for the cheese ball, taquitos and pumpkin pie:)

I've been tagged by my sister Joey! The name of this game is to answer the following 10 questions and then tag 4 other friends to do the same on their blog pages...

Best thing you cooked last week...Joey's potpie. It is sooo good. Consider this recipe an early Christmas gift!

To make it for your family, simply start out with a frozen Marie Callendar's double pie crust. Preheat your oven to 375 degrees. Thaw one crust while you get the other stuff together. You will need: a rotisserie chicken (shred all the meat off of it), one can of cream of potato, one can of cream of chicken, 1/4 cup milk,small bag of frozen peas, small bag of frozen corn, salt and pepper. Mix it all together and dump in the frozen shell. Shape the thawed shell on top, cut a few lines in the crust with a knife, and cook for 40 minutes. Broil for five minutes until the crust is lightly browned. Let sit for 5 - 10 minutes before serving.

Happy Birthday Amber!

Just wanted to give a little shout out to my friend Amber who had a birthday over the weekend. I remember when I first met Amber, I was totally stunned that someone could be that tall, thin and perfect! I thought for sure she would be totally self absorbed, but she is truly one of the most down to earth, fun and interesting people I know. I miss not seeing her everyday anymore--and wanted to wish her all the best this year with her cute family and new baby in a few months. Love ya Amber!

Travels

I spent the better part of last week living out of a suitcase. I had a presentation at our hospital in St George, so flew down last Monday to get ready for it. It was just kind of one of those perfect days of solitude. The airport was a little quiet, my phone wasn't ringing off the hook (that was this week!@*#), and I just sat and relaxed. The ride down was smooth, and I stepped off the plane to 70 degrees. I rented a little Kia and drove into Snow Canyon to take in the red rocks. I then went to dinner on my own to the Pasta Factory and had a totally silent meal. No Mack demanding anything from me. No Shane. No TV or Wii. It was utter and pure bliss. I went back to the hotel and worked for a while and took in some good Project Runway reruns. Sigh. It was the nicest day I have had in a while. I love St George so much:)



I went to Kansas City the next day for a student nursing convention. I went with a few of our nurse managers and the other recruiter from Provo. We had some amazing meals and tons of laughs. I also scored an incredible cashmere sweater for a steal at Banana. That was a definite highlight. I also visited my Mecca, the Paper Source. Made me feel happy just going there and seeing and breathing in all that creativity. I also started going to bed sooo early there. We stayed at the Hyatt (which was the same one I stayed at five years ago when I went to Kansas City and I don't remember it being so nice) and I vegged in this huge, perfect, white bed that had like three thousand pillows. It was so good for me as I have been up at 6:00 am every day this week.

This political season has been an exciting one for us as my father-in-law ran for the City Council at Large seat in West Valley City. We had so much fun as a family going to the debates, meet the candidates nights, and folding brochures. In the end, my sweet father in law did not win, but he did such an amazing job! I was so proud of him and am so honored to carry the last name of Matheson. This little adventure taught me to become more involved in the political process and study the issues and candidates. Would encourage you all to to the same! We had a great time at an election party on Tuesday night(we hobnobbed with Peter Caroon!) We had the chance to meet Shanna (my sister in law's) new guy too which was great.

The Cheesecake Factory Saga--and Happy Birthday Keith!

I have been excitedly anticipating the opening of the Cheesecake Factory in SLC. It is a requisite to go there whenever I travel somewhere that has one. Love everything on the menu. Keith (my brother-in-law's) birthday was the same weekend, so we had planned to go on Saturday afternoon to celebrate both events. The plan was to meet at 2:30 and hopefully miss the lunch crowd and beat dinner service. We met at Fashion Place to a melee of cars, police cars and fire trucks in the parking lot. There had been a pedestrian hit and run in the parking lot. I think the guy was okay. We got a pager with a 3 and a half hour wait time. We debated whether to stay or go, but collectively thought maybe it wouldn't be that long of a wait. We shopped at Banana, Ann Taylor, and Mom and I went to get our brows waxed. Two and a half hours later we were dining on yumminess! Can't say for sure if it was worth the wait, but we had a great time hanging out and it was a super enjoyable way to spend a Saturday afternoon.

Had to include too my favorite things about my brother in law to say Happy Birthday!

1. He is just as in to pop culture and the finer things in life as I am!
2. Want to know where the best Indian, Thai, etc. place is? Keith is your guy.
3. He is super smart! Blows me away!
4. He is an awesome husband to Ashley and fun uncle to Mack and the other kids
5. You never have to question where you stand with Keith. If he is in a bad mood, he doesn't try to conceal it and fake being happy. A good quality! We are both Scorpios, so I tend to identify with his moods as I am usually the same way!

Happy Halloween

A quick recap of the last few weeks

I like keeping this little blog to keep you all posted on my fascinating life (as if:), but also as an electronic journal as well. Just wanted to let you know (and remind me!) what has been going on the last few weeks.

Halloween party
I got really lucky (this part I am serious on!), and was somehow selected to be the Room Mother for Mack's class. I guess that helped validate I can work and still be involved in Mack's school life too. Anyway, I had some great moms help me do little Halloween mini games. We did pumpkin bowling (the pumpkin totally split open. Seeds everywhere!), Halloween Bingo, Scary Musical Chairs and Pumpkin Cookie Decorating. It was lots of noisy fun, but made me really glad for my quiet little office job.

Rexburg trip
Every spring and fall I take a trip up to BYU Idaho to do campus recruiting. Their nursing program is super competitive, so every student is just so employable. Would love to take all of them home and put them to work. My fun friends from Utah Valley and Primary Childrens came with me. Really fun road trip in this horrible little Ford Taurus full of laughs, gossip and business talk. We usually stay at this incredible little bed and breakfast right outside Rexburg in a little town called Rigby. Unfortunately, the innkeepers were on vacation, so we stayed in Idaho Falls.

My birthday
I am sad to admit with every passing year, my birthday holds less and less magic. I don't mind getting older--love where I am at in life right now more than any other time--but the anticipation of gifts, birthday cake, all that stuff you couldn't get enough of when you were little is just not what it used to be:) I did get a darling little Kitchen Fairy from Amanda, a very generous gift card to Best Buy from my in-laws (we are buyng Guitar Hero III this week for our Wii if anyone wants to come over!), an iPod thing for my car from Shaner and Macker, a fun lunch to Chili's from Joey, a gift card to Rod Works from my work, and some really sweet phone calls and cards from my family and friends. So, thanks to all for making 32 such an enjoyable day!

Reading
Okay, so I am about to start Eclipse in the Stephenie Meyer series. Amanda told me books 4 and 5 will not be out for another year, so I am saving this little treat. Don't want to rush it:) I am also reading Alan Greenspan's new book. Just dipped into it, so will keep you posted on this one.

Music
Downloaded a few new tracks off the new Killers CD that will be released in the next few weeks. Love them. Love the free download on iTunes last week from Metro Station. Found an old Fray EP that I picked up as well.

Park City
Shane and I went to Park City the night of my birthday. We went sans Mack, and I was feeling a little guilty for leaving him out of our celebrations. The drive up was perfect. The trees were turning colors, the moon was hanging low, and the temperature was so nice we opened the sunroof. When we got out of the car, a wall of pine (visually as well as the scent) hit us. We went to Main Street Pizza and Noodle--a favorite of ours--and shared a heaping plate of spinach pasta with mushrooms and cream. The first game of the World Series was on, so we just relaxed, ate slowly, talked and watched the game. I was instantly grateful we didn't bring Mack. Loved that quiet time with Shane just to talk and take more than 10 minutes to eat dinner. After our meal, we wandered over to my favorite bookstore on Main Street. Cats just walk around everywhere (Mack swears the last time we went there a cat was helping check people out). It adds this relaxed, homey, something to the store. We browsed all the interesting corners of the store, and I drooled over all their amazing Crane stationary. They had this great sample book you could order custom made Christmas cards from. Can't ever imagine spending upwards of $400 on a dozen cards, but a girl can dream:) The trip back down the mountain was just as pleasant as the ride up. Love ya hon!

School violence and Conference

It has been sad the last few days hearing about another school shooting tragedy in Cleveland. So scary when I stop to think of the crazy world Mack and all the other kids I know and adore are growing up in. But, listening to conference over the weekend, there was a talk by the new member of the Quorum of the Twelve, Elder Quentin L. Cook. He made the following remarks:

I know that many of you are concerned about raising your children during these difficult times and increasing their faith. When my wife and I were starting our family in the San Francisco Bay Area, we had that same concern. At a critical point our stake members were advised by Elder Harold B. Lee, then a member of the Twelve, that we could raise our families in righteousness if we would:

1. Follow the prophet.
2. Create the true spirit of the gospel in our hearts and homes.
3. Be a light to those among whom we live.
4. Focus on the ordinances and principles taught in the temple. (See D&C 115:5; Harold B. Lee, “Your Light to Be a Standard unto the Nations,” Ensign, Aug. 1973, 3–4.)

As we followed this counsel, our faith increased and our fears decreased. I believe we can raise righteous children anywhere in the world if they are taught religious principles in the home.

Nice thoughts in the wake of tragedy. Go hug your kids:)

Happy Birthday Joey!

Only a week late, but wanted to wish Jo a happy birthday and let her know I was thinking about her. I love lists, so here are my top five fave things about my sister (who is the same age as I am now for three weeks!)

1. Joey is relentless in finding a deal. She can somehow make magic out of a mere .97 cents at Old Navy.
2. Her cooking is simply amazing! Cherish my cookbook she made a few Christmas' ago. Her potpie and waffles have saved me on many occasions.
3. Her ability to keep a secret and confidences. I love to gossip and spill the beans to anyone, and she can totally keep a lid on things. A quality I would love to have.
4. The sweet Mom she is to her kids. Love watching her interact with them.
5. The fun and lightness she can always bring into a room. Love being around her and feel very blessed to have grown up with her. Love ya Jo!

Happiness

The Circus

We went to the circus last weekend with Shelley (Shane's sister) and her family. My first time to the circus. It was actually fun. A little goofy, and perhaps a tad politically incorrect (PETA was everywhere!), but all in all, a good value for $15. Mack tried to deny he didn't like it, but loved the performing dogs the best. They were quite cool with all the tricks they could do. Made me think that maybe they are getting beaten to learn how to do them, but hopefully they gloried in the applause:)

I was tagged on Amanda's blog to tell you seven things about myself you may not know about me. Loved your list Amanda (chased by a skunk--really?!). Here goes!

1- I had a shirt in elementary school that had a rainbow across the chest I loved a ton. I would always try to suck in my stomach so my rib cage looked like boobs in that shirt. Holy cow--if I only would have known then what I was in store for!

2- I love dried fruit (apples, pineapple, apricots, bananas). Bought a Ronco food dehydrator in college, but could never get it quite right.

3- My first job was working at Orange Julius at Valley Fair Mall. I bought a $40 Esprit pink t-shirt with my first paycheck, and still think it was one of my favorite pieces of clothing of all time to this day.

4- I was a JV cheerleader in high school. I was so not good--couldn't tumble or dance at all. Didn't make it again the next year for the Varsity squad, and was secretly relieved.

5- My first car was a big, huge, blue boat of a thing. I thought I wanted a car so badly--any car at all--but came to the realization there is something to be said for having a cute car. Somehow that never really went away...

6- I haven't seen or spoken to my dad in over nine years.

7- The ultimate indulgence for me is reading in bed all day long. I have only done it like twice in my lifetime (came home from college one weekend and read Frankenstein for two days straight for a paper I had to write, and once when Mack was a baby and he slept all day on and off. Read Wally Lamb's This Much I Know is True). But, I do sometimes stay in bed for hours and read.

Ok so nothing really exciting about me but maybe something someone didn't know. I am now tagging Amber, you're it!

Okay, sorry if I scared you with this title. Nothing X rated or anything like that:) Had a couple of epiphanies over the weekend that confirmed my descent into adulthood.

I got into this weird fight a few months ago with my neighbor. She called me up and let me know Shane was a complete jerk to her kids. So, of course I launch into the fight or flight mode and go back to her questioning why if that was the case, why were her kids at my house 24-7?! Needless to say, she hung up on me, and we started that ignoring phase that is just so fun. A few days ago, I decided to make her cookies out of the blue and take them over. Just something random, but I wanted to get past the weirdness that had built up between us. Anyway, a few days later, her kids came over and presented me with a starter for Amish friendship bread. Moral of the story? Food is a good way to mend fences. Oh, and forgiveness is really freeing.

I also went with my Mom and sister to a funeral for my Mom's cousin over the weekend. She was just 59, and left behind some adult children, but also her husband and a 7 year old boy they had adopted. The speakers were so touching. But, watching the dad and little son cling to each other, almost killed me. I realized just then how grateful I am for eternal families--and for love for our families now. Just such an incredibly powerful emotion. The whole thing just made me think about my life and my family all weekend. Keep praying that somehow, some way, this little family will make it and everything will be okay. I am sure it will.

Lastly, Mack's last baseball game was tonight. We had so much fun. I remember at the first of the season, I was so freaked out because Mack was kind of not doing that well. Blamed Shane a lot for not doing more practicing with him (just because he has so much time and everything:), and each baseball game was just not fun because of my bad attitude. As the season has progressed, Mack has learned more, but I have also learned how to relax. Figured out it is no big deal if he is not that great--he had a total blast, and loved every second of it. You dream about your kids succeeding at everything, but in the end, you realize it is perfectly find if they are just mediocre and enjoying the journey.

Wow--lots to think about. I think I need some mindless TV:)

A quick recap of our adventure to pick up our car...

Do any of you remember seeing the Net with Sandra Bullock? I was so amazed that in the first scene, she ordered a pizza completely online. It was so out there--I couldn't believe you would ever be able to do anything like that. Fast forward a few years, and now most purchases are all made that way. I bought my car, our Disneyland tickets off of Ebay, and booked our airline and hotel stuff all online. All within like an hours time. So love technology.

Okay, so everything went like clockwork getting my car! We got a nice pickup at the airport, a tutorial on the car, and we left to enjoy a few days off in Orange County. Hit ESPN Zone our first night in Downtwon Disney. It was just so good--love that place. They also had some really fun stores. Loved the Sephora.

The next couple days we were at Disney. Super, crazy hot--but a blast. Loved the Blue Bayou restaurant in the Pirates of the Carribean ride. A small fortune, but well worth it. We visited my favorite mall ever in Costa Mesa. Found it last year on a business trip, and promised myself I had to return whenever I was back in Orange County. A yummy Paper Source, H&M, Kiehls and a Jo Malone. Wish so bad we had a mall like that. Well, maybe not--I would probably be bankrupt.

Vegas was next. Mack was more excited for Vegas than Disneyland. Scary for an eight year old. Went to one of my favorite Cheesecake Factories ever at Caeser's Palace. The Hilton we stayed at was not nice. We were spoiled staying at the Mandalay Bay last spring. I am trying to talk Shane into taking me to the Four Seasons in Vegas for our anniversary. Really love the nice hotels there:)

After staying a night in Las Vegas, we sped home and enjoyed the rest of Labor Day hanging out. Such a fun trip! Realized I don't have a picture of my car to share. Will do that this week:)

A day of beauty

I am so excited to announce that I am an aunt again! Little Girl Brough (no, not her name, her parents just haven't decided on her name yet) was born today at Cottonwood Hospital. She looks just like her sibs--love those Brough kids to pieces! I am hoping she is just as outgoing as Kaela, just as sweet and loving as Sam, and just a flair of personality like Karissa.

I also was surprised today with this amazing flower arrangement from one of my managers. After working like crazy for the last few months to fill a key position in the OR at our new hospital, this was a very sweet reward. Have never seen anything like it--have been enjoying it all day.




I also got the paperwork in the mail today on my car I bought online. Yep, I bought a car online. Would highly recommend the experience for any of you that are like me and consider a trip to a car dealership worse than getting a root canal. This was totally painless and easy. It is in Newport Beach, and we are going to go to pick it up on Thursday. It is a super cute silver BMW X3. The pics of my car from their website were down a day after I bought it, but will post pics in a the next week or so.

What a great Friday:) I am so blessed!

Fall baseball

Mack and Brakin decided to play fall baseball. Mack is actually doing fairly well. He plays two days a week, and got two hits and stopped a couple balls last game.

Tourists in Salt Lake City

After a tiring week at work again (can I even tell how excited I will be when our new hospital opens in October? We are like 60 days away and counting, and I think helping to staff it may just kill me:) all I wanted to do was veg in front of my Tivo and order pizza. But, coming home from work and finding the boys slumped on the couch watching reruns of SpongeBob convinced me we probably needed to get out of the house. The three of us put our ideas into a hat (I really wanted to go up in the mountains after I got my second wind, Shane wanted to play the Wii, Mack wanted to go see Underdog for the third time), brainstormed a bit, and it was decided we would go downtown to the temple grounds. We went to the Garden for dinner--somewhere I haven't been since I worked at the Church Office Building. We got an amazing table overlooking the temple and watched a beautiful sunset. I was worried Mack may not totally love the fare that was offered, but he dug into his cheese raviolis, and then ordered dessert. I had this really summery raspberry and chicken salad. So beautifully plated, I had to share it! After dinner, we walked around the temple for a bit, and then went to see the Joseph Smith movie. Such a powerful movie. I love feeling the Spirit (sometimes hard when I am refereeing Primary ever Sunday), and it was so intense. Love getting that gut feeling to reconfirm my belief in my Church. Made my stress at work and everything else going on seem so manageable compared to those types of struggles. Wow--I just have it so easy. Shane and Mack both loved it too-I think it was great for our family. So, go tour your own city more! So much fun:)

Love So You Think You Can Dance!

Did TV just get so good within the last couple years or what? Me and Joey (along with several kids) watched the finale to So You Think You Can Dance tonight. Just so good! We are sad the tour isn't coming through Salt Lake City :( We would probably be like the only people there over 15, but so what. Just had to say how much I loved this show, and am so glad it got picked up again for next summer! Go Sabra!

Happy Birthday Mom!

Happy Birthday Mom! It was great this week to celebrate my Mom's birthday and reflect on our relationship. I started thinking of all the reasons I just love my Mom to pieces and thought it appropriate to let the world know how great I think she is:) Here are just a few of the highlights:

1. Her example - My mom is truly an inspiration to me. She persevered through some pretty rough stuff I wonder sometimes if I could handle. Through a difficult divorce with three little girls, to going to college when we were little, through a second marriage and trying to negotiate the stuff that blended families have to deal with, she has just done it all with grace and selflessness. She always reminded me that going to college right after high school was basically non-negotiable, and after seeing her slug her way through with kids, it really made me want to get it done while I had no other responsibilities other than myself. I am soooo grateful for that now. Can't even imagine for a second being in college right now with a job, husband and child.

Her devotion to religion also makes me admire her so much. She has never wavered from what she knows to be true, and gives every ounce of herself to whatever calling she is asked to do. It has made me strive to also put the same effort and love into church as well.

2. Her attitude - I know that Winston Churchill coined the euphemism that you should never, ever, ever, give up, but my mom just personifies that. Growing up, she always drilled into us that if you choose to accept a task, you give it everything you have got. She never let us just do anything half way, and was just there every step of the way pushing us. I have also learned from her that a smile and being gracious to people is just about the best beauty secret out there. People seem to gravitate to my mom because of her amazing attitude and sunnyness.

3. Her sacrifice - When I was 16, I didn't get that Guess jeans, cheerleading uniforms and hair products were lots of money. My mom worked her guts out to supply us with the latest, and I feel awful now I didn't understand then what stress this probably put her under. She recently vowed last year to get rid of all debt, and it has been awesome watching that. Guilt has definitely arisen as I figure lots of those dollars were probably spent on me at some point. I also loved how my mom taught me that being poor as long as you are happy is totally okay. I was thinking back the other day to my college days, and how great it was sitting in an art history class in the Museum of Fine Arts basement at the U at 2:00 in the afternoon. When will I ever get to do that again?! Shane and I were crazy poor, but we were happy and loving what we were doing. Thanks Mom for making me realize that was okay:) I am also really grateful to my mom for her career choice. I know that when my mom went back to school after her divorce, her dream was to be an attorney. Realizing that would probably be super hard with four kids, she opted to teach school so she could be home more. While I know this job sometimes drives her over the edge, I am grateful that she was there for us in the evenings and weekends. Hang in there mom--just a little longer!

4. Being a working mom will not make your kids crazy - This is often a subject I am really sensitive about as I am a working mom out of the home. I often wonder if Mack will turn out to be some serial killer because I wasn't at home with him all of the time. I find solace in my mom's example that with a little extra creativity and help, things can work out okay. I guess I always admired my mom's career outside of the home, and always dreamed about what I would do when I grew up too outside of being a wife and mom. I guess I have learned from my mom that everyone is a little bit different, and that is perfectly acceptable.

Mom--love you so much:) Thanks for all you do for me!

A Wii Invasiion

We were just getting ready to walk in to see the Bourne Ultimatium when we got the call. Karla had tracked down a Wii for us at Costco. We had been vaciliating between getting one for a few months. Was it worth it, would Mack be on it nonstop, would this be a more suitable Christmas gift that just getting one for no reason...the list went on and on. We really could never find one anywhere, so it seemed like our fate was sealed that we would not be getting one. After a bit of discussion at the popcorn counter, we decided to get it. We have had lots of fun the last few days playing on it. Bowling so far as been the biggest hit, and we had fun hosting a BBQ tonight with my family to celebrate our new techie addition. My favorite thing other than having fun watch everyone play was Kaela's Mii survey. On the Wii, you make your own Mii to play games. You fashion the person after your likeness with the same facial shape, hair, eyes, height--you get the idea. Kaela decided to draw her own Mii survey, and went around talking to everyone about their preferences. Luckily, she left it here tonight, so I am including it! It also had a fun Bratz twist to it as well:)


Only one accident so far. Keith hit his head on the ceiling fan and burned off part of his hair playing Smooth Moves with Mack. Maybe not the most attractive look for his first week at his new law clerk job (Congrats Keith!), but some things in life are just a sacrifice:) Thanks again Karla for the find--we are having a blast!

Ode to Sunday Morning Waffles and questions for long car rides

Is there anything more luxurious than a slow, relaxing breakfast? Mack and I made homemade waffles before church this past Sunday, and just savored their yumminess! Mack, Shane and I had them for breakfast (with blueberry syrup), for lunch (made into sandwiches with turkey and provolone) and this morning for a quick breakfast. Thanks for inspiring me with these waffles Joey! I am including this recipe from Joey's famous cookbook for all to enjoy.

The best Waffles ever
2 eggs
1 and 3/4 cup milk
1/2 cup vegetable oil
2 cups flour
4 tsp baking powder
2 tbsp sugar
1/2 tsp salt

Beat eggs until fluffy. Stir in the remaining ingredients. Batter should be lumpy. Pour into hot waffle iron.

1. Summer - used to be my most unfavorite season. The heat alone just seemed awful. But, have just loved the last couple summer seasons. Ashley's pool has definitely been an added highlight to beat the warmth. It has been great to feel lazy. Laying around by the ac vents, wearing summer skirts and eating Snowies just can't be beat lately. I have been telling Shane I want to retire to St George or Mesa. Can't wait for year long heat:)

2. Mack's little friends - love this circle we live in. Mack had a built in friend base when we moved in last year. Each friend that comes over has such a unique personality and outlook on life. From the reserved, thoughtful Stockton, to the brash, hilarious Brakin, they have just made our life so sweet. Love you guys!

3. The Assault on Reason - have been reading Al Gore's book this summer. Really inspiring and interesting. Can't wait for the election season to begin! Man, it is looking so interesting. Can't wait to hear the debates and platforms. Really want an Obama for peace shirt I have seen a couple people wearing.

4. Philosophy Melon Daiquiri lipgloss - oh, just so yummy. I could live on the smell alone. Never gets gross even when I leave it in my car on a hot day. Shimmery, fun and just the best beauty product I have used in a while.

5. autotrader.com - I have been looking for a car to replace my Jeep I have to turn in next month. I have been obsessing over mileage, options and prices for the last month. I think we have settled on a BMW X3. Ian has proclaimed it one of the ugliest cars on the road, but I love it's solidness and gritiness with a little splash of style. We test drove one this week and really liked it. Okay, I agree, it is a bit of a soccer mom car, but I think it will totally suit our purposes great. Will post a pic of the one we end up with.

Happy Birthday Shaner:)

We celebrated Shane's birthday last weekend. Had so much fun hanging out with family. We went to Tepanyaki with Shane's family on Friday night. I seriously can't remember the last time we went out with them. So glad we did. Had a blast laughing at all the craziness of the meal (fires, onion volcanoes, shrimp catches). I tried all weekend to attempt to make homemade ice cream with my cute new Cusinart ice cream maker just for Shaner. Bad news--it was kind of hard :( From having to freeze the bowl, to preparing the "custard" (separating eggs, boiling everything on low for 30 minutes, the $5 cream), to figuring out an accurate consistency--WOW! Made me really grateful for those hard working guys at Ben and Jerry's. For $3 you can save yourself quite a bit of headache. Thank heaven Smith's had some great ice cream deals this week. It completely bailed me out!

Thanks to all our friends and family for their support of Shane. It is nice to have birthdays to celebrate people. It made me reflect on all the reasons I love my Shaner and why I think he is just fab. This last couple of years he has just worked so hard at work. I guess being in HR and doing employment, sincere engagement in what you do just inspires me. This last year he has won the Officer of the Year for West Valley City, placed first place in a building search in a local K-9 competition, and started teaching at the Police Academy as an adjunct professor. He truly loves what he does, and it really defines who he is. He has also been so wonderful with Mack. What would I do without him?! Our schedules sometimes get hectic and crazy, but I know I can always count on him to be there for Mack, clean our house and take care of our yard. I am so blessed! Love ya hon!

Second grade is over!

Yesterday was Mack's last day of second grade. It was bittersweet for both of us--no more dragging him out of bed in the morning for me, but no more seeing Mrs Hall and his friends for 2 months for Mack. I have loved watching Mack blossom this year. From his funny new sayings (like, Mom!), to the friendships he has developed, it has been so fun. I would love to bottle eight years old forever.



My neighbor, Amanda, and I made these candy bar posters for our kids the night before the last day of school. I had never made a candy bar poster before, so wasn't sure how I would put it together. But, it ended up being a blast. Mack LOVED his candy bar poster, and I am so excited to continue this new, fun tradition for the last day of school. I ended up having enough treats to also make one for Shane that turned out really cute. Thanks Amanda for this fun idea! Love ya!



Last night to celebrate, we went to go to Ratatouille. I guess South Jordan (we went to the District) didn't do their city planning so well as the power went out twice during the movie. After the second outage, we were offered refunds and left. The first twenty minutes was really good though! I totally love Top Chef and the Food Network, so it was kind of like an animated version of that:)

Well, off to the pool today at Ashley's apartment--can't wait!

I left my heart in San Francisco...

I am so excited my first post gets to be about one of my favorite places in the country:) Not only does it generate lots of wonderful childhood memories (thanks Grandma), but it is just truly such a spectacular place! The weather, culture, shopping, food, family--just love it all!

We had a wonderful time last weekend spending time in the city and with family to celebrate Paul and Sherri's sealing. Here are some of my fave memories of the trip:

Our day trip into the city:

I forced everyone to go to the Cheesecake Factory in the Macy's building downtown. Luckily, everyone ended up loving it--even though Mel called it a tourist trap! This is a shot of me on the terrace the restaurant. If you ever visit San Francisco and want to go there really easily, take BART to the Powell Street exit and just head up to Macy's past the huge Apple store. After that yummy lunch, we trolled my favorite clothing store I have to hit every time I am out of Utah--H&M. It was just massive--three floors of crazy and cool goodies. Some of it is just way too out there, even for me, but if you dig around, you can find some real treasures. I found a super cute black dress that ties on the side, a yellow and striped linen skirt, and lots of fun summery shirts. We then took Muni down to the wharf--which is always a requisite of any trip to San Francisco. The weather again was just perfect. Always a perpetual spring there.

Oakland was insanely freezing! Other than the low temps, the day was really wonderful. There was an amazing spirit at Paul and Sherri's sealing, and I loved seeing all the support from their ward family there. We spent the rest of the afternoon at Paul and Sherri's laughing and reliving old memories. Lots of fun.

Can't wait to go back soon! Thanks Karla A TON for keeping Macker for me all weekend. So nice to get away with no kids sometimes:)
